Ingredients

Serves 1 serving
  • 1 bundlesomen or soba noodles
  • Grated daikon radish, to taste
  • Chopped green onions, to taste
  • Tempura bits, to taste
  • 2/3 pieceginger (grated)
  • 3 tablespoons☆noodle soup base
  • 1 cup (250 ml)☆water
  • 2/3 tablespoon◎potato starch
  • 1 tablespoonplus ◎water

Steps

    Cook the somen and drain the water.

  2. 2

    In a small pot, combine the ingredients marked with ☆ and bring to a boil, then add the grated ginger.

    Reduce to low heat, add the mixture of ◎, then stir over medium heat until it thickens. Add the somen to warm it up.

    Serve in a bowl, topped with tempura bits, green onions, and grated daikon radish. The photo also shows a bit of shichimi spice added.
