Mix all the sauce ingredients marked with ● in a bowl. This creates a miso sauce with a gentle plum aroma—delicious!
*Add more ume paste or sugar to taste, if you like.

In a bowl, combine the warm rice, bonito flakes, white sesame seeds, and a little soy sauce if desired. Mix well.

Shape the mixture into firm rice balls. (Using plastic wrap makes this easier.)
*Be sure to press them firmly—if they're too soft, they'll fall apart when grilling.

Heat sesame oil in a skillet over medium heat. Grill the rice balls on both sides until golden brown.

Once browned, spread the miso sauce on one side and flip. Quickly spread sauce on the other side, flip again, then transfer to a plate.
*The miso sauce burns easily, so work quickly.
