Everyday Sukiyaki-Style Tofu

Ingredients

Serves 2–3 servings
  • 1 block(about 12 oz/350 grams) firm tofu
  • 5.5–7 oz (150–200 grams) thinly sliced beef (such as for hot pot or stir-fry)
  • 1 package(7 oz/200 grams) shirataki noodles (konjac noodles)
  • 1 stalkgreen onion (white part)
  • For the simmering sauce:
  • 2/3 cupwater (150 ml)
  • 3 tablespoonseach soy sauce and sake
  • 2 tablespoonseach mirin and sugar

Steps

    Cut the tofu and beef into bite-sized pieces. Slice the green onion diagonally. (Cut the tofu first and let it drain in a strainer for about 5 minutes to remove excess water.)

    Rub the shirataki noodles with salt, rinse with water, and cut into easy-to-eat lengths. (Kitchen scissors work well for this.)

    Heat a little oil (not included in ingredient list) in a skillet. Sauté the beef. When it's mostly cooked, add the green onion and lightly sear.

    Add the simmering sauce, tofu, and shirataki noodles. Stir occasionally and simmer for 6–8 minutes, until everything is cooked through.
