Ingredients

  • 1 1/2 cupOrganic Poha
  • 1/2 cupChopped carrots
  • 1/2 cupGreen peas
  • 1/2 cupChopped potato
  • 1/2 cupChopped coriander leaves
  • 1/2 cupGroundnuts
  • 1Green chilly
  • 1 cupChopped tomato
  • Salt
  • 1 tspMustard seeds
  • 1 tbspCurry leaves
  • 2 tspJaggery powder/Sugar
  • 2 tspTurmeric powder
  • 1Lemon
  • Oil for cooking

Steps

  1. 1

    Add 1 tbsp oil in a wok & put it on stove. Fry groundnuts in this oil & set aside. Wash & strain organic poha & set it also aside.

  2. 2

    In the remaining oil in wok, add mustard seeds, green chilly & curry leaves. Once mustard seeds start to crackle, add potato & tomato. Add salt, turmeric & cover with a lid.

  3. 3

    In about 5mins, when potatoes are softer, add chopped tomatoes & cook.

  4. 4

    Now, add jaggery/sugar, salt & turmeric to strained poha. Add this poha to wok & mix well.

  5. 5

    After cooking for about 2mins turn off stove. Add lemon juice to poha & mix well.

  6. 6

    Garnish with chopped coriander leaves & serve hot.

I am an IT professional. In midst of busy routine, I still prefer home-cooked meals over fast food or grab-n-go snacks from outside or even from my office cafeteria for that matter. Since I have always been picky with veggies, I keep on devising hacks to include more and more veggies in my meal. That's why you will find that even with most conventional recipes, I always have my own versions ;)Creativity to the rescue!!All of my cooking is "satvik" i.e. without onion-garlic & usually I try to prepare food in a quiet ambiance & with quiet mind.
