Add all ingredients except the green onions to a pot. Bring to a boil, then turn off the heat.

Pour the broth over cooked udon noodles. Top with green onions, wakame seaweed, tempura flakes, or your favorite toppings.

If you like green onions, be sure to add them as a garnish. It really gives the broth that authentic stand-up udon shop flavor.
