Ingredients

Serves 4 to 5 servings
  • 6 cupsdashi broth (about 1.4 liters)
  • 1 tablespooninstant dashi granules (if using, dissolve in 6 cups water)
  • 1/2 cupsoy sauce (100 ml)
  • 1/2 cupmirin (100 ml)
  • 2 teaspoonssugar
  • 1 tablespoonsake
  • 1 teaspoonvinegar
  • 1 pinchsalt
  • Sliced green onions (scallions), as needed, for garnish

Steps

  1. 1

    Add all ingredients except the green onions to a pot. Bring to a boil, then turn off the heat.

  2. 2

    Pour the broth over cooked udon noodles. Top with green onions, wakame seaweed, tempura flakes, or your favorite toppings.

  3. 3

    If you like green onions, be sure to add them as a garnish. It really gives the broth that authentic stand-up udon shop flavor.
