Sauté the garlic and onion in olive oil and let them cool slightly.

Make the remoulade sauce. Mix all the A ingredients together. Adjust the taste with salt and pepper.

Make the crab cakes. Mix the crab meat with the sautéed garlic and onion, and all the B ingredients.

Gradually add breadcrumbs while checking the softness. Add enough so that moisture doesn't seep out of the mixture, approximately 3 to 6 tablespoons.

Divide into four portions and shape them. Coat the entire surface with breadcrumbs.

Fry both sides in plenty of olive oil over medium heat until golden brown.

Spread the remoulade sauce on a plate, place the crab cakes on top, and serve.
