Similar to my 'Fully Hacked Pancakes', this was an attempt however at a pancake that can be assembled from ingredients you can find in a normal grocery store. Low carb (but doesn't go too far to eliminate them), High in fiber, High in protein. This pancake is engineered for mass consumption / fluffy / low calories. Typically 3 inch pancakes are about 100 calories. These pancakes should clock in under 100 calories for the whole batch (3 pancakes).

Ingredients

1 Servings
  1. 1 TablespoonCoconut Flour (35 calories) (discount 10 for fiber)
  2. 1 TablespoonSweetener (monk fruit, Splenda, Stevia, etc)
  3. 1/8 teaspoonBaking Powder
  4. 2egg whites (6 Tablespoons) (50 calories)
  5. 2 TablespoonsWater
  6. 2 TablespoonPumpkin Puree (10 calories)

Steps

  1. 1

    In large mixing bowl, mix together ingredients

  2. 2

    Add wet to dry, mix in water tablespoon at a time until you get a pancake batter like consistency. Let it sit for a few minutes.

  3. 3

    Cook like pancakes using 1/4 cup batter for each pancake. They should take 2-3 minutes for first side (they will shift from a orange to less orange and a more yellowish color), flip and cook for another minute.
