Jingisukan on an Electric Griddle!

Spread marinated jingisukan (lamb) on an electric griddle and grill it. While it cooks, quickly stir-fry vegetables in a skillet and add them to the griddle—no waiting, super easy!
Recipe background:
I used to make jingisukan in a special grill pan, but cleanup and maintenance were a hassle! The electric griddle is so much easier and more convenient. It does everything in one, makes eating more fun, and honestly, the taste is just as good or better than the traditional pan!
Today I just used whatever vegetables I had on hand, but you can use any ingredients you like.

Ingredients

As much as you like
  • As much as you like marinated jingisukan (seasoned lamb)
  • Just enough to lightly coat the surface vegetable oil
  • Vegetables (whatever you have in the fridge)
  • As much as you like cabbage
  • As much as you like onion
  • As much as you like carrot
  • As much as you like green bell pepper
  • As much as you like garlic chives (or ramps, if available)
  • Jingisukan sauce, to taste

Steps

    Preheat the electric griddle, lightly coat it with oil, and spread out the marinated lamb. Since the temperature may drop, turn up the heat and grill until nicely browned.

    While the meat is cooking, stir-fry the vegetables in a skillet (no oil needed). Just lightly sauté them! Move the cooked meat to the sides of the griddle.

  3. 3

    Place the sautéed vegetables in the center of the griddle and mix them with the juices from the lamb. This way, you may not even need extra sauce.

    You can start eating right away without waiting for all the meat and vegetables to finish cooking. The electric griddle keeps oil splatter to a minimum and makes cleanup easy!

    Best of all, you can enjoy this with udon noodles or other ingredients too! For a finishing touch, add rice at the end and make fried rice—it's delicious!
