Ingredients

Serves 2 servings
  1. 1 packageenoki mushrooms
  2. About 7 oz (200 grams) tofu (small block)
  3. 1 clovegarlic (or 1 teaspoon grated)
  4. 1 pieceginger (or 1 teaspoon grated)
  5. 2 teaspoonsdoubanjiang (chili bean paste)
  6. 1/4 cup (50 ml)water mixed with 1 teaspoon soup base (like chicken or vegetable bouillon)
  7. 1 tablespoonmiso
  8. 1 tablespoonmirin
  9. 2 teaspoonssoy sauce
  10. 1/2 tablespoonpotato starch or kudzu starch
  11. 1/2 tablespoonsesame oil
  12. Chopped green onions, sesame seeds, or black pepper (optional)

Steps

  1. 1

    Finely chop the garlic, ginger, and enoki mushrooms. Cut the tofu into cubes. Mix together the ingredients marked with * (miso, mirin, soy sauce, soup mixture).

  2. 2

    Add a little oil to a pot and sauté the garlic, ginger, and doubanjiang. When fragrant, add the enoki mushrooms and the mixed * seasonings all at once, and stir well.

  3. 3

    When it comes to a boil, add the tofu and bring it back to a boil.

  4. 4

    Mix the potato starch (or kudzu starch) with 2 tablespoons of water, add to the pot, and cook until thickened.

  5. 5

    Drizzle sesame oil over the top, shake the pot to mix everything, and it's ready. Serve topped with green onions, sesame seeds, or black pepper if you like.
