Bring 3 3/4 cups water (900 ml) to a boil. Add the 2 packets of soup base and some sliced green onions. Set aside.

Stir-fry the pea shoots and seasoned bamboo shoots. (See https://cookpad.wasmer.app/recipe/3654610) Wash the bean sprouts and boil them briefly.

Pour hot water into serving bowls to warm them.

Cook the rice noodles according to the package instructions. Rinse quickly with cold water to stop the cooking. Pour hot water from the bowls over the noodles to warm them.

Place the noodles in the bowls and add the soup. Top with bean sprouts, char siu pork, pea shoots, bamboo shoots, and roasted seaweed as you like.
