Easy ▶ Kansai-Style ◀ Osaka Dotonbori Kake Udon

You can easily recreate this refined Kansai-style plain udon at home using kombu dashi and light soy sauce.

When I was transferred for work, I couldn't find Kansai-style udon or even instant udon with West Japan seasoning. I had no choice but to make it myself, so I created this recipe.

You can easily recreate this refined Kansai-style plain udon at home using kombu dashi and light soy sauce.

When I was transferred for work, I couldn't find Kansai-style udon or even instant udon with West Japan seasoning. I had no choice but to make it myself, so I created this recipe.
Steps

Add all ingredients marked ◎ to a pot and heat. Once it comes to a boil, turn off the heat.
*You can do Step 2 at the same time.

Heat the udon noodles according to package instructions in the microwave (or boil and drain if using dried noodles), then place in a bowl.
*You can do this at the same time as Step 1.

Gently pour the broth from Step 1 over the noodles from Step 2, loosen the noodles slightly, and add your favorite toppings from the examples below. Enjoy—it's easy!

For light soy sauce, I used a premium Japanese light soy sauce. Use any light soy sauce available to you.

For noodles, I used frozen udon. Any frozen or dried udon noodles will work.

Just add store-bought shrimp tempura.

Just add a raw egg and tororo kombu (shredded kelp).
