Korean Shrimp Dumplings (Saeu Mandu)

Saeu Mandu, or shrimp dumplings, are commonly sold at markets and specialty shops in Korea. 'Saeu' means shrimp, and 'mandu' means dumpling. They make a great dish for entertaining guests.

There are many types of mandu (dumplings) in Korea, but it's hard to find them in Japan, so I experimented with easy-to-find ingredients to create this recipe.
Each dumpling has a whole shrimp inside, making it a beautiful dish for special occasions.

Finely chop the peeled shrimp. Soak the glass noodles, then finely chop them. Boil the bean sprouts, squeeze out excess water, and finely chop. Finely chop the garlic chives and garlic as well.

For the shell-on shrimp, peel the shells leaving the last segment near the tail intact. Remove the vein, make a few shallow cuts on the belly side, and pat dry with a paper towel.

In a bowl, combine the ground pork and chopped shrimp. Add the filling seasonings (soy sauce, beef bouillon powder, sesame oil, black pepper) and mix well. Then add the glass noodles, bean sprouts, garlic chives, and garlic, and mix again.

Lightly coat the prepared whole shrimp with potato starch.

Place some filling from step 3 onto each dumpling wrapper, then place a whole shrimp on top and wrap it up.

You can use any wrapping method you like. Shape as desired.

Arrange the dumplings in a steamer and steam over high heat for 10 minutes. To prevent water from dripping onto the dumplings, place a steaming cloth between the steamer and the lid.

They're ready to serve! It's okay if the shrimp curl a little—don't worry about it.

Serve with your favorite dipping sauce. The recipe includes choganjang (Korean-style soy sauce and vinegar dip), but regular soy sauce with vinegar or chili oil also works well.

You can make extra dumplings and freeze them. Arrange them on a tray lined with parchment paper, freeze, then transfer to a zip-top bag once frozen.
