Marinate the ground pork with the marinade ingredients for at least 1 hour. Set aside.

Soak the wood ear mushrooms in water until soft, drain, and slice into thin strips.

Wash the Napa cabbage thoroughly. Blanch in boiling water until cooked, then chop finely and squeeze out excess water. Set aside.

Mix the chopped cabbage and sliced wood ear mushrooms with the marinated pork until well combined. Chill in the refrigerator for at least 1 hour.

Lightly dust a plate with cornstarch.

Place some filling in the center of each dumpling wrapper. Brush a little egg white along the edge, fold to seal, and pleat the edges. Place on the prepared plate.

Heat oil in a skillet over medium heat. Pan-fry the potstickers until lightly golden on the bottom. Add 1 bowl of water (about 1 cup/240 ml), cover, and steam for 6-8 minutes until the water evaporates. Serve.
