Ingredients

  • 1- Whole fish 450 -700g(1 lb-1lb 8oz), dressed weight, preferably porgy, sea bass or gourami
  • 1 tsp- salt
  • 2 tbsp- Vegetable oil
  • 2 Cloves- Garlic, peeled and coarsely chopped
  • 1large - Onion, peeled and coarsely chopped
  • 1 tsp- Sambal oelek
  • 2 tbsp- Sweet soy sauce (Kecap manis)
  • 1 pinch- Ginger, ground
  • 1/2 tsp- Galangal(laos) ground
  • 1- Salam leaf (daun salam)
  • 1 tbsp- Tamarind jucie (asam jawa)

Steps

  1. 1

    Rub fish all over with salt. set aside.

  2. 2

    Heat oil and saute garlic and onion until lightly brown. Add fish and lower heat, then add sambal oelek, soy sauce, ginger, galangal and salam leaf. Baste repeatedly.

  3. 3

    Cover tightly and cook over very low heat for about 20 minutes. Baste continuously. Water may be added to prevent fish from adhering to pan.

  4. 4

    Add tamarind juice 5 minutes before removing from heat serve immediately.
