A great way to use up leftover noodles. Perfect for a refreshing summer meal.

Cook the thick Chinese noodles according to the package instructions. Rinse under cold water and drain well.

Cut the cucumber into bite-sized pieces. Sauté in olive oil. Add the shiso sauce (see recipe ID20895746) and mix well.

Add the cooked noodles to the pan. Stir in the savory salt sauce, then add the tomato cut into wedges. Toss everything together, season with salt and pepper to taste, and serve.
