Monsoon is the time for piping hot food , be it just snacks , full meal or one pot meal . Here is one such recipe that we often make during monsoon. It is full of fiber , satiating & healthy meal .

Sukhi moong dal is a high source of protein & fiber , aids in digestion & promotes a feeling of fullness.

Kadhi , is a Yoghurt - based Indian curry that has several health benefits. The main health benefit is , the probiotics in yogurt contribute to a health gut , while the low glycemic index in Kadhi specially made with gram flour ( besan ) , makes it a good option for people managing diabetes.

Serve both Sukhi moong dal & kadhi with steamed rice to make it a complete meal.

Ingredients

30 minutes
1 platter
  1. 1/2 cupyellow moong dal
  2. 1 1/4 cupwater
  3. 1 tbspoil
  4. 1 tspmustard seeds
  5. 1/4 tspasafoetida
  6. 1/2 tspturmeric powder
  7. 1/2 tspgreen chilli - ginger paste
  8. Salt to taste
  9. Chopped coriander to garnish
  10. Kadhi : 👇
  11. 1 cuplittle sour curds
  12. 2 tspbesan
  13. 1 tspgreen chilli - ginger aste
  14. 1/2 tspgrated ginger
  15. 2 tspsugar
  16. 1 sprigcurry leaves
  17. 2 cupswater
  18. Tempering : 👇
  19. 1 tbspghee
  20. 1 tspcumin seeds
  21. 2cloves
  22. 1small piece of cinnamon
  23. 1/2 tspasafoetida
  24. 1dry red chilli
  25. Chopped coriander to garnish
  26. 1 bowlsteamed rice to serve
  27. Cucumber, onion & tomato Kachumber Salad as an accompaniment

Cooking Instructions

    Sukhi moong dal : Wash moong dal under running water 3- 4 times. Drain. Add fresh water & soak moong dal for 1 - 2 hours. Drain the water.

    Heat a pan with oil, add mustard seeds & let them crackle. Add asafoetida, green chilli - ginger paste& saute for 1/2 a minute.

    Add soaked moong dal & saute till it is coated well with oil. Add warm water, turmeric powder & salt. Mix well.

    Cover & cook stirring occasionally, till all the water is evaporated & the dal is cooked.The dal should not become mushy but whole grain should be visible. Garnish with coriander & keep aside covered.

    Kadhi : Take curds & besan in a bowl.Whisk well to make a smooth paste. Add green chilli - ginger paste, grated ginger, sugar & salt.Add water. Mix very well.

    Now take the mixture in a pot. Boil the curd - besan mixture for 5 minutes, stirring occasionally so it does not curdle. Set the consistency of Kadhi by adding more hot water if required.

    Tempering : In a small pan, take ghee, add cumin seeds & let them crackle. Add cloves, cinnamon, asafoetida & dry red chilli. Let them splutter. Add this tempering to the boiled Kadhi. Cover immediately. Set aside.

    How to serve : Invert a bowl of steamed rice in a plate. Invert a small bowl of sukhi moong dal on the rice. Garnish with coriander. Serve a bowl of piping hot Kadhi beside the rice & sukhi moong dal. Place Kachumber Salad for crunch & thus giving it a final touch to the most popular Gujarati Comfort food & taking it to the next tranquil level of satisfaction.
