Prepare potatoes and cook with a whole onion until almost done. Drain, remove onion, mash. Grate old cheddar cheese. While 1 finely diced onion is sautéed, but not browned. Add all ingredients together adding spices, Mix well. Set aside

Dough... Combine all ingredients except water. Heat water to boiling then add to ingredients. Mix well, knead into a ball..to a nice to touch stage. Let rest 20 min

Have a large pot of water ready boiling on the stove. Roll out dough in sections, to a very thin thickness. 1/8 of an inch. Cut with a glass into circles. Fill dough circles with potato mixture. Put on a cookies sheet with parchment paper, and cover with a damp towel. When enough as desired done cook in boiling water to the point where they come to the surface. Put onto another cookie sheet that has melted butter on it, continue till sheet is full... Put in freezer the whole sheet to cool.

Then pack and freeze. Do all the perogies this way until done
