Need to make something easy, relatively quick, and good, with things i had on hand. This turned out really good. It was not spicy, next time I'll add some heat also, but if you have someone who is capsaicin challenged, do it like this. The object was to have a thick sauce to sort of glaze the chicken, not so much a soup or gravy.

Ingredients

  1. 4-6chicken drumsticks
  2. 1small onion (or part of a larger one)
  3. 3 clovesgarlic
  4. 2 inchpiece fresh ginger
  5. 2 teaspoonscurry powder
  6. 3/4 cupchicken broth
  7. 4shakes worshishire sauce
  8. 1/4 teaspooncumin
  9. 1black pepper to taste
  10. 1salt to taste
  11. 1hot sauce to taste (optional)
  12. oil for cooking

Steps

  1. 1

    Heat a skillet on medium heat with 1-2 tablespoons of oil.

    Dice your garlic and ginger

  3. 3

    Slice your onion into rings

    Put the rings into the hot oil, stir until they start to soften.

    Add your garlic and ginger to the skillet, stir for a minute

    Add your drumsticks

    Grind some black pepper, add cumin, worshishire.

    Add curry powder in between chicken. Add 1/2 cup broth, hot sauce if using.

    Bring to a boil, turn heat down to a lower setting to simmer cover, simmer 12-15 minutes.

    Check chicken, flip each over. Add 1/4 cup broth, cover, simmer 10 minutes.

    Uncover and check the liquid level, and doneness of drumsticks. If to soupy, continue cooking uncovered. If the drumsticks need more time, make sure they don't dry out, cook until done adding a tablespoon or two of broth to keep a small amount of liquid in skillet.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
