Makhanas are popularly known as lotus seeds, fox nuts, Euryale Ferox, gorgon nuts, and phool makhana. It’s actually the puffed lotus seeds or the puffed fox nuts that have high nutritional and medicinal values and are mostly grown in state of Bihar in India. In India, Foxnuts are eaten during vrat or fasting. The Caramel Roasted Makhana or Sweet Makhana with Jaggery (Gur) recipe is a crunchy, deeply caramelized, and healthy snack for kids & adults who are on a diet.

First of all, dry roast the Makhana and peanuta in a pan on medium flame of gas for 7 to 10 minutes. Take it out in a bowl.

Now heat ghee in the same pan and add chopped jaggery to it and melt the jaggery on low flame of gas.

Now when jaggery is melted, add salt, white sesame seeds and Kashmiri red chilli powder and mix well.

Now add the roasted makhana and peanuts to this and keep mixing on low flame for 5 minutes so that the mixture of jaggery is properly coated on the makhana. Now these caramelized makhana are sticking to each other, so let them loosen the makhana in low heat.

Now our healthy and nutritious crunchy caramelized makhana is ready to serve.
