Slice the chicken breast into cube and marinate it with salt/soy sauce, egg white and corn starch for 30 minutes.

Slice onion/ paprika into cube size and carrots into ring size.

You may boil the carrots if you wish.

Prepare the sauce on the side.

After 30 minutes, prepare wok/ pan to deep fry/ pan fry the chicken. Deep fry the chicken until cooked/ golden brown and take it out and leave it aside.

Remove the rest oil from the wok.
Add the vegetable and stir fry a moment. - 7
Add the sauce mixture and add the chicken into the wok.

Cook it a moment (5 mins) and thicken the sauce with mix of water and corn starch if it is needed. If you donot want to use cornstarch, just cook the sauce longer (10 mins) and it will thicken by itself.
