Wash the amlas thoroughly and clean it with a cloth until it is dry. Keep it in the sun for ½ hour till the water dries completely.

Give the amlas small cuts so that it is helpful to I pare part of the amlas.

Take a pan and pour oil, in medium flame. After it gets heated, put the amlas in the oil, till it becomes light brown colour (the process might take 8-10 mins)

After frying the amlas, take them into another bowl.

Now, for the remaining oil in the pan, in low flame. and add the tamarind juice and stir it for 5minutes. Now let it cool. (Lukewarm)

Now add small quantity of mustard seeds, red chilis. And put the amlas and mix them.

Take it into glass bowl.

The pickle is ready.
