Ingredients

Serves 2 servings
  1. 3large eggs
  2. 1small log fresh goat cheese (farm-style)
  3. Salt, pepper, and either Herbes de Provence or chives
  4. 1pat (about 1/2 tablespoon) unsalted or lightly salted butter

15 minutes
  1. 1

    In a bowl, whisk the eggs until well blended.

  2. 2

    Melt the butter in a nonstick skillet over medium heat.

  3. 3

    Pour the beaten eggs into the skillet and cook the omelette on one side only. Sprinkle with crumbled goat cheese, add your herbs, and adjust the seasoning to taste.

  4. 4

    Gently roll up the omelette and serve hot.
