Wash, peel & cut Totapuri mango into big pieces

Take a pan,add oil.When oil becomes hot add mustard seeds, cloves, cinnamon & dry red chilli Add asafoetida.

When the dry spices splutter, add mango 🥭 pieces & salt.Cook, stirring occasionally. After 4 - 5 minutes, the mango pieces will become transparent.

Now add sugar & stir continuously or the sugar will caramelize at the bottom of the pan. Let the sugar melt completely..

Once the sugar has melted completely, check the consistency of the sugar syrup. The consistency should be that of 1 string. Once it has reached 1 string consistency, switch off the gas.

Cool the mixture for 20 minutes.Then add Kashmiri red chilli powder. Mix well. Once this pickle has cooled completely, store in an airtight sterilized glass bottle.

Note : Do not make the mango pieces small, they should be big chunks so on cooking they will shrink & become small.

Note : This instant Totapuri mango 🥭 sweet pickle lasts for 1 year, if care is taken & always use dry spoon to remove the pickle. Keep the bottle in a dark cool place, away from heat. Always use sterilized glass bottle to store the pickle.

A point to Remember : Use the same amount of Totapuri mango pieces. & sugar. Remember the ratio is 1:1 & this recipe will never fail to give you the desired results. Enjoy the season of MANGOES 🥭 with your favourite recipes.
