Add 2 tablespoons olive oil to the pressure cooker. Season the veal chops with salt, then place them in the cooker over high heat. Sear for about 10 minutes, turning the chops halfway through.

Meanwhile, peel the carrots and cut them in half lengthwise, then into chunks. Remove the meat from the cooker, deglaze the browned bits with a little water. Add 1 tablespoon olive oil, the carrots, and the sliced onion. Sauté for a few minutes, stirring and deglazing occasionally.

While that's cooking, peel the potatoes, rinse them, and cut them into large cubes. Add them to the cooker. Add 1 teaspoon herbes de Provence, the chicken bouillon cube, 1 cup water (about 240 ml), salt, and pepper. Cook on program 3 for 15 minutes.

Serve on a platter and sprinkle with chopped chives.
