Cooking Instructions

Mix the yeast, sugar, warm milk, and water by hand or with a mixer. Let it rest for 10 minutes. Gradually add the egg, salt, and flour.

Beat for a few minutes to form a smooth dough ball. Add softened butter and continue kneading for 2 minutes. Let the dough rise for 1 hour at room temperature.

Flour the work surface and the top of the dough, then flatten it with your hands to a thickness of 1 1/2 cm. Use a cutter to cut out rounds of dough. Place the buns on a baking sheet and brush them with the egg and water mixture, then add the seeds, pressing them down with the palm of your hand.

Let rise again for 30 minutes at room temperature. Bake at 400°F (200°C) with a bowl of water for 20 minutes. Let cool before filling.

I have been wanting to make a full 100% vegan burger for quite some time, but I just couldn't figure out any appropriate way, sadly. I had researched and gone down the rabbit hole. Most just didn't turn out as I expected; too dense, too airy that the buns literally fell apart after slicing. Some even just use avocados as "buns". Yes! IKR?Just when I was about to give up, this recipe happened! I was messing around and thought to myself, "why not add the avocado into the dough?" The rest is history. The biggest challenge is to make a vegan "egg wash" so that the sesame seeds will adhere to the buns. "A simple syrup will do the trick", I thought to myself again. It works! I even sprinkled some extra rolled oats to sorta distinguish this from a normal burger bun. Expect more vegan burgers coming your way. Daniel Lim -

Having been confined at home for several weeks, I'm craving for a good cheeseburger. Unfortunately, it is really hard to find ready-to-eat hamburger buns in supermarkets where I live, in Japan.Cooking time says 4 hours, but most of it is waiting!
