This very simple vegan recipe uses just two ingredients: aquafaba (the liquid from canned chickpeas, which I used in my falafel recipe) and a bar of dark chocolate. That’s it!

This very simple vegan recipe uses just two ingredients: aquafaba (the liquid from canned chickpeas, which I used in my falafel recipe) and a bar of dark chocolate. That’s it!

Whip the aquafaba with a mixer until stiff peaks form, just like you would with egg whites.

Melt the dark chocolate using a double boiler.

Gently fold the melted chocolate into the whipped aquafaba, then divide the mixture into three small ramekins.

Cover with plastic wrap and refrigerate overnight to let the mousse set.
