Firstly, in a large mixing bowl add the suji, yogurt and water. Mix it well and let it rest for 15-20 minutes. In a blender add the corn kernels. Add some suji-yogurt batter and blend it to a smooth paste. This step is optional. Instead of the batter, you can add ginger, green chillies, cumin seeds and water and blend it to a smooth paste.

Add the blended corn paste to the suji-yogurt batter and mix until well combined.

Next add the crushed walnut, salt, turmeric powder and black pepper powder and mix it well. Add the oil and mix it again.

Add the crushed cumin seeds, ginger and green chillies and mix it well.

Add all the chopped veggies and mix it well.

Add the Eno fruit salt alongwith water and mix it. The batter is ready to make Sweet Corn Rava Appe.

Heat the appe pan on low flame. Add oil in each compartment of the appe maker. Add a small pinch of mustard seeds and curry leaves in each compartment. Add one tablespoon of the batter to each compartment. Cover and cook on low flame for 5-6 minutes until golden brown.

Flip and once again cover and cook for 4 minutes. Remove in a serving plate.

Healthy and Delicious Sweet Corn Rava Appe is ready. Serve it with roasted chana dal chutney or green chutney or coconut chutney or any chutney of your choice.

To make Roasted Chana Dal Chutney, in a blender add all the ingredients mentioned above under “For Chutney” and blend to a smooth paste adding little water at a time. Transfer the chutney into a bowl.

For tempering, heat oil in a tadka pan. Add mustard seeds and allow it to splutter. Add asafoetida, curry leaves and broken red chillies. Pour this tempering over the prepared chutney and give it a quick stir. Roasted Chana Dal Chutney is ready. Enjoy this chutney with Sweet Corn Rava Appe.
