This recipe we made last christmas as a starter, it's one of those recipes everyone seems to love and which goes with a lot of other dishes. I have meanwhile made a few different versions of red lentil soup and this is the 'special' combination I like the most. The hint of garam masala, ginger and coconut milk give it a special indian taste

Indian Red lentil soup with Garam Masala

Ingredients

30-40min
4 servings
  1. 150 gramsdried red lentils (cooking time about 20min)
  2. 750 mlchicken stock
  3. 1 teaspooncumin
  4. 1onion
  5. 2 clovesgarlic
  6. 400 gramsripe tomatoes (can)
  7. 1/4 bunchor fresh parsley
  8. 1-2 centimeterfresh ginger root
  9. 100-150 millilitercoconut milk
  10. 1 teaspoongaram masala indian spicemix (see also my recipe)
  11. some fresh ground pepper and sea salt
  12. optional:
  13. 1small red chili pepper if you like it more hot

Cooking Instructions

    Wash the red lentils and put aside

  2. 2

    Peel the onion and garlic, chop fine and put aside

  3. 3

    If you want to use the chili pepper wash it then cut it open and remove the seeds and cut fine and put aside

  4. 4

    Peel the skin from the ginger root, grate it and put aside

  5. 5

    Cut the peeled tomatoes into cubes and put aside with juice

  6. 6

    Put a 2 liter soup pan on medium heat with some olive oil, add the onion, garlic and optional the red chili pepper and fry slowly untill the onion is soft and looks glassy

  7. 7

    Now add the grated ginger root, the garam masala and cumin and slowly fry for another minute or to release all the flavours

  8. 8

    Add the tomatoes, chicken stock and red lentils and bring to boil

  9. 9

    Let boil for about 20 min then blend smooth with an electrical hand blender, add the coconut milk and boil another minute

  10. 10

    Add pepper and salt to taste and garnish with some parsley
