To meet this week's challenge, I'm sharing a recipe taught to me by my niece. It's a type of rolled Japanese omelette that's very tasty, perfect for breakfast or a snack.

Combine all ingredients except the pinch of salt. Beat the eggs gently without creating foam using a fork or chopsticks.

Add the soy sauce, dashi, and mirin.

Add the sugar, pinch of salt, and mix well without creating foam. Separately, melt a little butter in a non-stick pan.

Pour a small amount of the mixture to make a thin pancake and roll it up. Once rolled, push it to the back and, if necessary, add a little more butter. Add more mixture and lift the roll slightly so the mixture goes underneath and sticks before it sets completely, then roll again. Repeat the process until the mixture is finished. Serve hot.
