Rinse the rice and place it in 2 cups (1/2 liter) of cold water. Bring to a boil, add salt, and cook for 15 minutes from when it starts boiling.

Meanwhile, wash the arugula, slice the bresaola into thin strips, and dress with olive oil.

Drain the rice, let it cool slightly, toss with a drizzle of olive oil, then combine all the ingredients in a large bowl and serve.
