Red Sauce Calamari with Feta like Saganaki, Flavored with Dill & Basil ✨Easy✨
We love cinnamon, nutmeg, allspice, and cloves in red sauce dishes, but with seafood in the summer, I prefer a lighter taste.
Cooking Instructions

▪️ Sauté the onions and garlic in the oil until they soften. ▪️ Sauté the calamari for another minute. ▪️ Deglaze with the wine and wait for the alcohol to completely evaporate.

▪️ Add the tomato juice and the remaining ingredients except for the dill and basil. ▪️ Simmer on medium to low heat for about 40 minutes, stirring occasionally to prevent sticking. 👉 IF needed, thin with a little water from the kettle. (I didn't need to do this.)

▪️ Then, remove the bay leaves and mix in the crumbled feta. ▪️ Finally, add the dill and basil and stir. ▪️ Taste to see if you want to add more salt, pepper, or dill. Adjust the flavor to your preferences. ▪️ Serve immediately over: 🍚 rice or 🍝 pasta or 🍜 even noodles.

Notes: 👉 Besides fried calamari, which is unbeatable, this is the best calamari I've ever made and eaten... we devoured it! 👉 On my plate, I sprinkled a little grated cheese.
