Dissolve the yeast in the water. In a bowl, add the flour, eggs, salt, pepper, chopped parsley, and peeled shrimp.

Gradually add the yeast mixture to the bowl, mixing with a fork until you have a smooth, lump-free batter. If needed, add a little more water. Cover with a kitchen towel and let rise for about 1 hour.

After the batter has risen, heat the oil in a skillet or deep fryer. Once the oil is hot, drop spoonfuls of the batter into the oil to form small fritters. They will puff up as they cook.

Fry until golden on all sides, then drain on paper towels. Sprinkle lightly with salt, add some grated lemon zest, and serve hot.
