Cook chana dal in a pressure cooker in a bowl with 2c water. Follow the manual for operating the cooker

Fry the paste ingredients in a saucepan over low flame until fragrant. Grind the paste ingredients in a mixer by adding 1 cup of water to make a smooth paste. Keep aside

Add mustard seeds, cumin seeds and fenugreek seeds to 2tbsp hot oil in a heavy pan over medium flame. Fry about a minute Add onion, green chilies, curry leaves, turmeric powder,, sauté until onions get translucent.
Add the chopped gourd, sauté for 5 minutes. Add 4 cups of water and let it boil. Add the cooked dal, reduce flame after boiling. - 6
Add paste and stir, continue cooking for 2 minutes over medium heat.
Add milk and coconut milk, stir and simmer. Continue cooking for a couple of minutes to allow all the flavors come together. Turn off the stove. Add salt and stir. Garnish with coriander leaves and roasted cashew nuts. Kottu is ready - 7
Transfer the koottu to a serving bowls. Serve with rice, chapati, or even dosa. You can also enjoy a small bowl of the koottu by itself
