Ingredients

  1. 1 cupbasmati rice
  2. 1/2 cupmung beans
  3. 1/2 cupfinely chopped onion
  4. 1/2 cupfinely chopped cabbage
  5. 1/2 cupchopped capsicum
  6. 1/2 cupchopped tomatoes
  7. 1/2 cupcubed carrots
  8. 1/4finely chopped fresh coriander
  9. 1 inchfresh ginger
  10. 2 clovesgarlic paste
  11. 2red chillies
  12. 1 teaspoongaram masala
  13. 1/2 teaspoonturmeric
  14. 1/2 teaspooncinnamon powder
  15. Salt to taste
  16. 1 teaspoonKashmiri chilli powder
  17. 1 tablespoonlemon juice
  18. 2 tablespoonghee
  19. 1 teaspooncumin seeds
  20. 2-3curry leaves
  21. 1 tablespoonoil

    In a mixture jar add red chillies, ginger and garlic and make a fine paste. Set aside.
    Wash and soak mung beans for at least 4 hours

    Wash rice thoroughly and let it soak for at least 30 minutes.
    Remove water from mung beans. In a pressure cooker add oil and once hot, add mung beans and 1/4 cup water add salt to taste. Pressure cook 3 whistles and let it cool.

    In a pan add 5 to 6 cups of water and bring it to boil. Remove water from rice and add to the boiling water. Cook until soft and drain water. Let it cool completely. Set aside.

    On medium heat, add ghee and once it melts add curry leaves and cumin seeds. Add in chopped onion and sauté until translucent. Add carrots and chilli paste and cook for a minute. Add cabbage and ginger garlic paste and cook for further minute.

    Add in chopped capsicum and tomatoes and add salt, turmeric, chilli powder, lemon juice, fresh coriander and garam masala and mix well.
    Add mung and stir. Finally add the cooled rice and mix well. Cook for a minute stirring lightly. Transfer in a serving dish and garnish with fresh coriander leaves. Enjoy with yogurt or raita.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
