Chilled Soba with Grated Yam & Okra

This cold, refreshing, and sticky dish really whetted my appetite. I forgot to take a final photo, but it was delicious!

Recipe background:
I wanted to eat cold soba on a hot day, so I made this. The sticky okra and creamy grated yam, topped with mashed pickled plum, were delicious. My husband had the same toppings with udon noodles instead.

Ingredients

Serves 2 servings
  • 1 packagesoba noodles
  • ◆Toppings
  • 1 packageokra
  • 1/2Japanese yam (nagaimo), grated
  • 1eggplant
  • 1tomato
  • Store-bought grated daikon radish
  • As desired, mentsuyu (noodle soup base)
  • As desired, shredded nori (seaweed)
  • As desired, tube ginger

Steps

    Use a 3-serving package of soba noodles.

    Prepare mentsuyu, shredded nori, tube ginger, and grated daikon radish.

    Rinse the soba noodles in water, then chill them in ice water.

  4. 4

    Grate the Japanese yam (nagaimo).

    Mash the pickled plum. Prick the eggplant all over with a skewer, wrap in plastic wrap, microwave for 2 minutes, then cool in water. Once cool enough to handle, tear the eggplant into strips by hand.

    Remove the stem from the tomato and cut into bite-sized pieces.

    Arrange the soba noodles on a plate, add your favorite toppings, and pour mentsuyu over to taste before eating.

    My husband had chilled udon noodles with the same toppings: grated yam, tomato, eggplant, shredded nori, and wasabi, topped with mentsuyu.

    Sprinkle salt on the okra, rub it on a cutting board, rinse, then slice into rounds. Boil water, add a little salt, and cook the okra for 2–3 minutes.

    Drain the boiled okra in a colander, rinse with cold water, and let it cool completely.
