Hot summer days can kill your appetite! Make a pot of Three Cup Chicken—it's a rice lover's dream. With a special secret ingredient, this dish is slightly spicy, a little sweet, and super flavorful.

Leave the garlic cloves whole and slice the ginger thinly. Mix together all the Three Cup Sauce ingredients.

Heat a pot and add 2 tablespoons sesame oil. Sauté the ginger slices until fragrant and golden, then add the garlic and cook until aromatic. Add the chicken thigh and wings, stir-fry until the surface is browned, then add 3 tablespoons sesame oil and the spicy bean paste. Stir-fry until fragrant.

Pour in the Three Cup Sauce and mix well. Add the water, bring to a boil, and stir. Cover and simmer over medium-high heat for 15 minutes until the sauce thickens.

When the sauce has reduced, taste and adjust the seasoning if needed. Add the Thai basil and chili peppers, and stir-fry until fragrant.

Transfer the chicken to a clay pot (if available), add 1 tablespoon rice wine, bring to a boil, stir, and serve your aromatic Three Cup Chicken.
