  1. 1whole chicken thigh (boneless, skin-on)
  2. 3chicken wings
  3. as neededSliced ginger,
  4. 8whole garlic cloves
  5. as neededChili peppers,
  6. as neededFresh Thai basil (or basil),
  7. 2 tablespoonssesame oil (about 30 ml)
  8. 3 tablespoonssesame oil (about 45 ml)
  9. 1 cupwater (250 ml)
  10. 1 tablespoonrice wine (about 15 ml)
  11. 1 teaspoonblack vinegar (about 5 ml)
  12. 1 tablespoonspicy bean paste (doubanjiang)
  13. 4 tablespoonssoy sauce (for Three Cup Sauce) (about 60 ml)
  14. 2 tablespoonssoy sauce paste (for Three Cup Sauce) (about 30 ml)
  15. 2 tablespoonsrock sugar (for Three Cup Sauce) (about 30 grams)
  16. 3 tablespoonsrice wine (for Three Cup Sauce) (about 45 ml)

    Leave the garlic cloves whole and slice the ginger thinly. Mix together all the Three Cup Sauce ingredients.

    Heat a pot and add 2 tablespoons sesame oil. Sauté the ginger slices until fragrant and golden, then add the garlic and cook until aromatic. Add the chicken thigh and wings, stir-fry until the surface is browned, then add 3 tablespoons sesame oil and the spicy bean paste. Stir-fry until fragrant.

    Pour in the Three Cup Sauce and mix well. Add the water, bring to a boil, and stir. Cover and simmer over medium-high heat for 15 minutes until the sauce thickens.

    When the sauce has reduced, taste and adjust the seasoning if needed. Add the Thai basil and chili peppers, and stir-fry until fragrant.

    Transfer the chicken to a clay pot (if available), add 1 tablespoon rice wine, bring to a boil, stir, and serve your aromatic Three Cup Chicken.
