You can have it as a snack or for breakfast/lunch or dinner.Madurai special egg Kothu idli recipe, it tastes exactly like egg Kothu Parotta. Spices used in this recipes are exactly same like Kothu parotta.I prepared this recipe with a leftover idli.

Crumble the idlis using your fingers and set aside.

First fry the cashews in a pan with oil and keep it aside. In the same oil season fennel seeds and add ginger and garlic and saute well..

Saute onions, green chillies, curry leaves and saute well along with one tomato.

When the tomato and onion are fried, add chili powder, coriander powder, turmeric powder and then add egg and fry well and finally add salt and fry well..

When everything is mixed together, add the idli that we have and mix together and finally sprinkle pepper powder, garam masala powder, coriander leaves and mix it.

Now egg kothu idly ready to serve..
