Sterilise the mason jar.

Wash the gherkins and either slice them 0.5 cm thick, or chop off each end (i.e. for whole, crunchy gherkins). Put in jar, leaving a 1 cm gap at the top.

Heat sugar, spices, salt and sugar in vinegar and water to boiling.

Pour boiling pickling solution over gherkins, leaving a small gap at the top.

Seal jar (will keep for a month in the fridge). For longer storage boil mason jar for 15 mins.
