
Prawn and chorizo linguine

Heat splash olive oil in a frying pan. Slowly cook the onion until soft. Then add the chilli and cook for 3 mins before adding the chorizo. When the oil starts to spread, add the tomatoes and a splash of white wine. Cook until the tomatoes start to split.

Meanwhile, cook the pasta according to the packet instructions - aim for al dente

Once the pasta is cooked, reheat the tomato mixture, add the raw prawns and cook for a couple of minutes until the prawns are cooked through.

Finally, add the pasta to the tomato mixture. Sprinkle over the lemon zest, the parsley and loads of black pepper.

Serve with a good sprinkle of Parmesan
