Darbari Gosht is one of the delicious Mughal cuisine variations among the Non-Veg varieties of amazing and flavourful dishes. Not only is it a refreshingly awesome treat but also is done so very easily too.
As with almost all the Mughal dishes, this one too is a rich and a crowd pleaser.
This one here is with the Lamb/Goat bone-in but it can definitely be made with Beef and Chicken as well for a delightful spread.
This one is popular among my folks and it generally adorns our dining tables in many a family get-togethers and reunions. Though it goes very well alongside Parathas and Naans. It can always be served with many of our authentic and amazing Rice dishes too like Vegetable Pulao, Cumin Rice, Chicken Fried Rice, Vegetable Fried Rice, Kabuli Pulao, Kaju Rice, Hyderabadi Bagara Khana etc. You will just love it. To start with the recipe, heat both oil and ghee in a pressure cooker. Or if you want to slow cook it, then take a wide cooking pot. Add sliced onions and fry until golden brown. Now add the mutton bone-in and the ginger garlic green chilli paste. Saute it until the colour changes on a medium high heat. Keep stirring at regular intervals.

Meanwhile also blanch tomatoes and either chop it or make a puree of them as per one's own choice. Add it to the cooker as well. Also add the red chilli, turmeric and coriander powders along with the garam masala too. Now add the mutton bone-in and the ginger garlic green chilli paste. Saute it until the colour changes on a medium high heat. Keep stirring at regular intervals.

Also roast all the ingredients mentioned under the masala paste. Grind using a little water and make a paste. Add this paste to the mutton bone-in. Add half of the salt too and later it can be adjusted.

Pressure cook for about 7 whistles or more as required. Let the steam settle down on it's own before opening the lid of the cooker. Adjust salt and garnish with lots of chopped coriander leaves and green chillies. Cover and cook for about 5-6 more minutes.

Serve it piping hot right away. Enjoy!
