Cooking Instructions
- 1
Preheat oven to 160ºC. Grease a round shallow pan.
- 2
Spread the brown sugar on the bottom of the pan. If using nuts, sprinkle them evenly over the sugar. Scatter the butter pieces. Put in the oven for about 8 minutes.
- 3
Stir the mixture until dissolved and spread evenly on the bottom of the pan. Place a single layer of the banana slices on top of the sugar mixture along the entire bottom of the pan.
- 4
Combine all dry ingredients in a large bowl. Add all the remaining wet ingredients and beat over just until combined. Do not over beat.
- 5
Pour the batter over the sliced banana in the pan.
- 6
Bake in the preheated oven for 1 hour or until a toothpick inserted into the middle comes out clean but moist.
- 7
Allow to cool in the pan for 20 minutes before inverting in on cake platter. This is to allow the sugar and banana set.
- 8
Prepare the caramel glaze..
Place the butter, brown sugar and heavy cream in a small saucepan. Cook it until well combined and not over cooked. Simmer for about 2 minutes and let it sit for a minute.
You can also microwave all the ingredients for a minute but I prefer to cook it in a saucepan so I can control the temperature. - 9
To serve, pour the glaze evenly over the cake on top.
- 10
I like to eat it with whipped cream or double cream. You can serve it with vanilla ice cream too if you like.
- 11
Enjoy …

I got a little cocky after I made a pineapple upside down cake and thought I could do the same thing here. It might look a little messy... but it was extremely delicious. In retrospect, it was the caramel that made it messy but it really complimented the berry sauce. Karl -

Cafe-Style Banana Cake Cafe-Style Banana Cake
The banana cake that I ate in a cafe had a delicious flaky texture and wondered if I could recreate that at home. The cake I ate at the cafe came with caramel cream but I'm more of a caramel sauce kind of person. If you don't have a food processor, you can mash the bananas up with a fork. When you are making the caramel, the mixture will sputter when you add the last lot of water, so be careful. Make sure to chill the sauce well once you've made it. Recipe by Raby cookpad.japan -
Ultimate Moist Banana Cake Ultimate Moist Banana Cake
I've tried making lots of different banana cakes, but if I mixed in lots of bananas, the cake would always be too heavy. I tried thinking up a recipe where I could still use lots of bananas but result in a light yet satisfying cake,. I was aiming for something between a genoise and a pound cake. You can definitely taste the banana, but this cake is still soft and moist and has the best balance of any cake I've made until now.I recommend using fully ripened bananas. If the bananas aren't fully ripe then increase the amount of sugar. Even with ripe bananas, this is not very sweet. I also recommend using unsalted butter. After baking, let the cake rest for over half a day for a moister, more delicious flavor. Recipe by Yukiline cookpad.japan -
