Ingredients

  1. 1 kgmutton on the bones
  2. 700 gmsbasmati rice
  3. 2 litrewater
  4. 4tej patta
  5. 1 tspcumin seeds
  6. 4whole garlic
  7. 2 tbspginger garlic paste
  8. 2sliced medium-sized onions
  9. 1 tbspgreen chilli paste
  10. 8green chillies
  11. 4 tbspghee
  12. 1/2 tspJavitri powder
  13. 2 pinchfreshly made nutmeg powder
  14. 1 tspfreshly ground garam masala
  15. 1 tspwhole black pepper
  16. 1 tbsplemon juice
  17. 2medium size onion sliced and deep fried
  18. 2 tspSalt or as required
  19. For masala potli
  20. 4-5green cardamom
  21. 2black cardamom
  22. 1 tbssauf
  23. 1 tbspwhole coriander seeds
  24. 2 inchescinnamon broken
  25. 4cloves

Steps

1 hours 30 minutes
  1. 1

    In a pressure cooker add cleaned mutton, ingredients given for masala potli tied in a muslin cloth

  2. 2

    Sliced onion, 1 tsp ginger garlic paste, 2 tej patta and salt, along with 4 green chillies and whole garlic pods, pressure cook until cooked

  3. 3

    Heat up ghee in a broad vessel, add ginger garlic paste, green chilli paste.

  4. 4

    Strain the mutton pieces from its stock, reserve the stock. discard masala potli and whole garlic, you can also squeeze out garlic pulp and use it in the frying masala

  5. 5

    Add strained mutton pieces to the pan, add cumin seeds and whole pepper, 2 tej patta and remaining 4 whole green chillies

  6. 6

    Add previously soaked basmati rice, salt, garam masala powder and fried onions

    Measure stock, if it is less than 2 ltrs add hot water, add it to the rice. Add javitri and nutmeg powder

  8. 8

    Cook it for 5 minutes on high flame, add lemon juice, lower the flame, cook it covered until done and water is absorbed. Give it a gentle stir.

    Ready to serve.
