Scratch Streusel'd Peach Rhubarb Cobbler

I love cobbler. This one's a mashup I made with a streusel topping. Can leave that off if you want a still fantastic basic cobbler. Leave out the rhubarb if you are some sort of purist.

I love cobbler. This one's a mashup I made with a streusel topping. Can leave that off if you want a still fantastic basic cobbler. Leave out the rhubarb if you are some sort of purist.

Saucepan up the filling! Peaches, rhubarb, sugars and salt. Cook over med heat until the sugar has melted fully and the peaches start releasing the sweet sweet nectar! Turn off the heat and sprinkle with cinnamon.

Preheat oven to 350

Take the batter butter slices and put them in a 9x13 baking pan. Put the pan in the oven while preheating to melt the butter slices. Remove when melted fully.

Mix together the batter. Flour, sugar, salt, baking powder with milk until just fully combined and a bit runny.

Pour batter and scrape into baking pan right into the butter line sauce!

Drop peach rhubarb mixture right on top evenly and maybe just push a bit of it together. No need to mix or anything crazy. I usually would dust a bit more cinnamon here and a little splash of nutmeg

Put this in the oven and immediately start the topping. Melt the butter just barely and set aside. Start a timer for 40min

Mix the topping flour, sugars, salt together well. Drizzle the melted butter in with a fork to make it clumpy.
Don't have the butter too hot. Don't over mix. It should be crumbly.
The goal is to put the topping on when the cobbler is just starting to rise, like 5-10min into baking.
(Probably could make half this if desired to be less Streusel'd)

Pull the cobbler out and carefully put the streusel topping right over the top and get it back in the oven. Finish baking.

Once baked for 40-45min it should be browned on top and the streusel should have pockets of peach lava bubbling out.
