Boil 2 small potatoes or optionally microwave high power for 3 minutes. Set aside to cool and peel the skin.Peel the outer skin of pumpkin. Grate cubed pumpkin with a grater, approximately 1 cup.Squeeze out all moisture and use this liquid in soups or curries.Mix grated pumpkin with grated potato for a soft binding.Add cornflour and all the dry spices, salt and sugar (optional) to taste.

Heat 2 tbsp oil in a wok or pan.Sprinkle ajwain and hing.Saute and add grated ginger and garlic.Saute till aromatic.Add chopped onion and fry till translucent.Add the mashed pumpkin dough.Add crushed kasoori methi and whie wine vinegar or lime juice for a tangy flavour. Sprinkle chopped coriander.

Mix all and fry the dough for 2-3 minutes till well combined.Set aside to cool.Grind poha in mixer grinder and use it to coat the cutlets for a crispy exterior.

Pinch lemon sized balls from the dough and shape into round cutlets or shape them to your liking.Make a slurry of maida with water. Mix in 1/4 tsp salt.Dip each cutlets in the slurry and crumb coat.Coat twice for a crunchy texture. Refrigerate for an hour for a perfect binding in the cutlets.

Heat oil in a pan and fry cutlets on medium to high flame. Flip when one side done and fry till golden brown.Delicious Pumpkin Cutlets are ready to be served.Serve them with your choice of chutney or tomato sauce along with sliced onion and green chillies and relish !
