Walking past a street vendor, I originally planned to buy bananas, but after buying them, I was convinced to try some unassuming small bamboo shoots!

Prepare the ingredients: Rinse and drain the ginger slices, bamboo shoots, and green onions. Cut the hot pot ingredients as needed. Rinse the rice and set aside.

Heat oil in a pot and sauté the ginger slices until fragrant.

Add the ground pork and stir-fry until the fat is rendered. Add the bamboo shoots, rice, and water in order. Cook over high heat.

Check the thickness of the congee, then add the hot pot ingredients and continue cooking. Add the seasonings as needed, and drizzle in the beaten eggs.

Before serving, sprinkle with chopped green onions for a delicious savory congee!
