Japanese Macaroni Salad

This is one of the most popular salads in Japan, I think. It is easy to make and its flavour depends on which mayonnaise to use and the amount of seasonings. Fresh onion and sweet corn are essential for my salad. This salad strangely brings back the memory of the tacky kitchen in a little house where my family used to live when I was very young. Those days my mother often used fish meat sausages instead of ham slices. I wonder if those fish meat sausages are still available in Japan.

Thinly slice Cucumber into a bowl. Add 1/4 teaspoon Salt and massage, then rest for a while.

Cook Macaroni in a large saucepan of salted boiling water as instructed. Drain, rinse with cold water and drain very well.

Squeeze the Cucumber to remove excess water.

Place the cooked Macaroni, Cucumber, Corn, Onion, Ham and Boiled Eggs in a large bowl, add Japanese Mayonnaise and combine well. Season with Salt and Pepper as required.
