We started making oat biscuit after we stopped eating delicious biscuits and crackers that had bicarbonate of soda. We like these homemade ones very much and hope the you do too! They're easy, yummy and easy to customise.
We like them with vegan cream cheese or warm plant milk.

You could try adding orange zest to the mix (we didn't because we didn't have organic oranges at the time).

Ingredients

20-23mins (8min prep, 12-15min bake)
5 servings (15 biscuits)
  • 1-1 1/2 cupoat flour (we food processed 2 cups of whole oats)
  • 1/4coconut oil (add more if the mix is too dry)
  • 2 tspfresh ginger, grated
  • 1/4 tspmixed spice (with cinnamon)
  • 1 pinchsalt
  • 1/4 cupxylitol
  • 2 tablespoonsorange juice
  • 1 tspvanilla
  • Equipment
  • Food processor
  • Measuring cups and spoons
  • Baking tray
  • Baking parchment/foil
  • (Zester or grater if using orange zest)

Steps

20-23mins (8min prep, 12-15min bake)

    Preheat your oven to 180 degrees C.

  2. 2

    Ground your oats in the food processor - skip this step if your have ready-made oat flour.

  3. 3

    Put all the ingredients in the food processor and blend to combine.

    Pack a tablespoon of mixture tightly and then slide it of - not crumbling it up - and shape it into a round on foil/baking parchment on a flat surface - not too thick and not too thin.

    Bake in the oven for 12-15 mins (we did 15).

    You can eat straight away, but letting cool makes it easier to not break or crumble.
