Sauté the onions, then cook the pork ribs with them in a cast iron pot on the stove or over gas for 4 hours.

Remove the bones and shred the meat. Add a little broth and another tablespoon of sweet dried pepper powder until you get a ragù-like consistency.

To make the pasta, use 1 egg for every 3 1/2 ounces (100 grams) of semolina flour. If the eggs are small, add a few tablespoons of water.

Knead the dough and roll it out into sheets about 1/25 inch (1 mm) thick. If you don’t have a chitarra, cut the pasta into strips on a board with a knife.

Drain the pasta onto very hot plates and add the sauce.
