Peanut Chikki

Firstly roast peanuts. Peel of its skin and with a help of rolling pin, make coarse pieces as you like.Before starting greace a plastic or kitchen counter with ghee. Start by heating jaggery in a pan. It will soon liquefy. Stir continuously.

As it starts bubbling add baking soda. It will soon raise and change colour. Also add ghee at this stage for shining.

To check if our jaggery syrup is ready or not, drop few drops of it in a water filled bowl. After couple of seconds if it is chewey, stir more for some while. Test again. When it breaks like a candy, mixture is ready.

When the jaggery syrup is ready, quickly add the peanuts and mix it well. Spread it on the greased surface and quickly roll it thin as you want. Be careful at this stage. The mixture is too hot.

Give cutmarks when it is hot to get exact shapes. Cut into pieces when it cools down. You can make other chikkis with gram dal, sesame seeds, puffed rice, dryfruits, etc. similarly. So enjoy this Kite festival with homemade Chikkis.
