  2. 10 1/2 ozsmoked pork belly

    Remove the germ from the garlic and press it

    Thinly slice the onions and put the ghee in a large sauté pan

    Melt the ghee and add the garlic and onions

    Remove the rind from the bacon

    Lightly brown the garlic and onion, then cut the pork belly into lardons

    Add them to the pan, mix well, and brown

    Cut the chicken into cubes

    Add the chicken and mix well over medium heat

    Add the spices, salt, and pepper, and mix

    Add the mace and tomato pulp, mix, reduce to low heat, and cover

    Wash the peppers

    Cut the peppers in half, remove seeds and white membranes, then cut into thick strips

    Add the peppers to the pan and mix

    Let reduce for 10 minutes covered, stirring occasionally

    Add the coconut milk and mix well to fully incorporate

    Cook the naan in parallel and pour the preparation into a deep dish

Tips

Comment utiliser la couenne de la poitrine de porc fumée

Je n’ achète jamais les lardons du commerce les faire soi même est tellement meilleur 😋 je découpe la couenne et la conserve pour cuire les pommes de terre sautées c est un régal

Comment rendre l ail plus digeste

Ôter le germe avant de presser/ hacher les gousses d ail

Comment retrouver / identifier rapidement les épices

J achète toutes mes épices « en vrac » dans des magasins indiens, africains etc..je découpe le nom des épices sur les sachets et les colle sur les flacons de ma tour à épices

Comment cuisiner plus sainement ?

Utiliser du ghee (beurre clarifié) pour la cuisson des pâtisseries,viandes,légumes ect c est la matière grasse la plus saine et qui supporte le mieux les cuissons à haute température Le beurre classique fume à partir de 120°C, alors que le point de fumée du ghee se situe vers 250°C. Il est idéal pour les pâtisseries et toutes les cuissons (four, poêle…).
